Fruit cocktail squares

Makes about 20

2 extra-large eggs
125 ml (105 g) castor sugar
5 ml vanilla essence
375 ml (210 g) Snowflake self-raising flour
5 ml baking powder
1 ml salt
30 ml milk
80 ml cooking oil
410 g can fruit cocktail, drained
30 ml desiccated coconut
15 ml castor sugar

  1. Beat eggs and castor sugar until light and creamy. Add essence.
  2. Sift flour, baking powder and salt together. Whisk milk and oil together.
  3. Add dry ingredients to creamed mixture, alternately with milk mixture and mix well until smooth. Fold in fruit cocktail.
  4. Spoon mixture into a greased 20 x 24 cm baking pan. Sprinkle coconut and castor sugar over mixture. Bake in a preheated oven at 160 °C for about 25 minutes. Leave to cool in pan and cut into squares.
