Tuna & onion quiche

Serves 4 - 6

4 sheets phyllo pastry
60 g butter or margarine, melted
15 ml cooking oil
1 medium onion, coarsely chopped
2 x 170 g cans tuna, drained and flaked
250 ml (100 g) grated Cheddar cheese
2 extra-large eggs
125 ml milk
200 ml fresh cream
45 ml Snowflake cake flour
30 ml chopped fresh thyme or 10 ml dried
salt and freshly ground black pepper to taste

  1. Cut the four phyllo sheets in half. Brush each one with melted butter and place onto base of a greased 23 cm round ovenproof tart dish.
  2. Heat oil in a medium, heavy-based frying pan. Add onion and sauté for a few minutes until soft. Remove from heat and set aside to cool slightly.
  3. Spoon onion and tuna into pastry base. Sprinkle cheese over.
  4. Whisk eggs, milk, cream, flour, herbs and seasoning together. Pour over tuna mixture.
  5. Bake in a preheated oven at 180 °C for 40 – 45, or until set and golden brown.
